Coconut damper by Flora Warria

Ingredients:

• 1.5kg self-raising flour
• 3 whole coconuts (husked and scraped)
• Water
• Butter

Method:

1. Place scraped coconut into a bowl and almost cover with water.
2. Squeeze coconut to make milk and strain liquid into a bowl containing the flour.
3. Mix together then turn out onto a floured board and knead into a ball shape.
4. Place in a buttered baking tray and flatten lightly.
5. Bake at 180 degrees till golden brown.
